Cooking Something Up!

I have to admit...I am a very lazy cook. As of a couple of weeks ago, I was perfectly content eating Subway or cereal for dinner every night. It's sad, but it's the truth. I've been making small changes, not really in the hopes of losing weight - although that would be an added plus ;) but small changes that I can accommodate in my busy schedule.

My regular work schedule is Monday-Friday 10:30am - 7pm. I have time in the morning to sit and have a healthy breakfast, and pack my lunch for the day.

In the mornings I've been having Eggo Low Fat Waffles with my syrup measured out (this really satisfies by sweet tooth), because a lot is really not necessary. Honey Bunches of Oats, Oatmeal, and sometimes if I have extra time - some eggs with toast.

It has definitely been an adjustment and I am still getting used to preparing meals. Tonight I came home from work starving and a little guilt ridden because I ate a Boston Cream doughnut today at work. Someone brought them into work for everyone, and I couldn't remember the last time I had a doughnut. So I wanted to have something for dinner that I didn't need to feel badly about. Now, I really am not very skilled - but some whole wheat pasta, broccoli, onions, garlic, and some extra virgin olive oil really did the trick! I crave bread like its my JOB, and I definitely could have gone for some Subway, but this was a healthy and satisfying option - and it only took me about 15 minutes to cook up. I know it doesn't look very pretty, but it did the job.

Does anyone have some quick to fix up healthy meal ideas?
